Instant Pot Lentils are a great high-protein, low-calorie side dish, or a healthy option for the base of a bowl! They're easy to make with less than 5 minutes of prep time and just 10 minutes of cook time in the Instant Pot.

Ingredients
1 ¾cupsvegetable broth
1cuplentilsbrown or green
½teaspoonsalt
Instructions
Rinse the lentils under fresh water to remove any debris from the lentils.
Add the rinsed lentils, vegetable broth and salt to an Instant Pot. Stir until the lentils are covered in the liquid.
Place the lid on the Instant Pot and set the steam release valve to "sealing". Set the timer to "high" for 10 minutes and pressure cook on high pressure.
Once the cooking time is done, allow a natural pressure release on the Instant Pot for 10 minutes, then manually release any remaining steam.
Notes
This recipe makes 5 servings. Each serving is ½ cup cooked lentils. The nutritional information provided is for one serving, or ½ cup cooked lentils.
To add more flavor to the lentils, you can swap out the salt for 1 teaspoon of any of these seasoning blends:

You do not need to soak the lentils before cooking them. A quick rinse under cold water is all you need to make sure there's no debris in the lentils.
Cooked lentils can be stored in the refrigerator for up to 7 days, or in the freezer for up to 6 months.
