Slice the ends off a delicata squash, then slice the squash in half lengthwise
Remove the seeds from the squash
Slice the squash into 1/2 inch strips
Toss the squash with garlic, jalapenos, olive oil and taco seasoning
Roast in the oven, then add to a bowl with cooked quinoa, greens, avocado & creamy vegan chipotle sauce
